Homemade custard
Custard first appeared at the English royal court and became very popular in the 16th century, hence its name. In France, this sweet, vanilla-flavored custard is traditionally served cold, often as an accompaniment to desserts. This creamy and fragrant recipe is perfect for enhancing your desserts, especially chocolate fondant cakes or other sweet treats.
Ingredients for 4 people:

200 ml of crème fraîche

700 ml of whole milk

4 large egg yolks

3 tablespoons of cornstarch

100 g caster sugar

1 vanilla pod
Instructions :
Step 1: Prepare the milk and cream mixture
- In a large saucepan, pour the crème fraîche and whole milk . Heat gently until just below boiling point.
Step 2: Prepare the egg yolks
- In a large bowl, whisk together the egg yolks , cornstarch , sugar and vanilla seeds (previously extracted from the pod by splitting it lengthwise and scraping the seeds with a knife).
Step 3: Stir in the hot milk
- Gradually pour the hot milk mixture over the egg yolk and sugar mixture, whisking constantly to avoid cooking the eggs.
Step 4: Thicken the cream
- Wipe the pan clean, then pour the mixture into it. Heat gently over medium heat, stirring constantly with a wooden spoon, until the cream thickens and coats the back of the spoon. Do not let it boil to avoid lumps.
Step 5: Enjoy
- The custard is ready! Let it cool completely before serving. It's ideal with desserts like chocolate fondants, floating islands, or even fresh fruit.
