Quick and easy vanilla ice cream

Try this delicious homemade vanilla ice cream recipe using our Madagascar vanilla beans. The natural flavor of these beans adds an irresistible touch of indulgence to the ice cream. Perfect for relaxing moments of indulgence!

Ingredients for 4 people:

  • Milk 300 ml of whole milk
  • Cream 300 ml of whole liquid cream
  • Sugar 150 g of sugar
  • Eggs 6 egg yolks
  • Vanilla 2 vanilla pods or 1 20 cm pod

Instructions :

  1. Heat the milk and cream: In a saucepan, heat the whole milk and single cream over medium heat, without letting it boil. Split the vanilla pods in half, scrape out the seeds with a knife, then add the seeds and pods to the saucepan. Remove from heat and let it steep for 30 minutes.
  2. Prepare the egg yolks: In a bowl, whisk together the egg yolks and sugar until the mixture whitens and becomes frothy.
  3. Stir in the vanilla milk: Remove the vanilla pods from the saucepan, then slowly pour the hot milk and cream mixture over the egg yolks and sugar, whisking constantly to avoid cooking the eggs.
  4. Cook the custard: Transfer the mixture to the saucepan and cook over low heat, stirring constantly. The custard is ready when it coats the back of a spoon and reaches about 82°C (180°F). Do not let the custard boil.
  5. Let cool: Remove the cream from the heat and let it cool to room temperature, stirring occasionally. Then place the cream in the refrigerator for at least 4 hours, ideally overnight.
  6. Prepare the ice cream: Once the cream is completely cold, pour it into an ice cream maker and follow the manufacturer's instructions. If you don't have an ice cream maker, pour the cream into an airtight container and place it in the freezer, stirring every 30 minutes to break up the ice crystals until the ice cream is set.
  7. Finish and serve: Transfer the ice cream to an airtight container and freeze for at least 2 hours before serving.
  8. Enjoy: Serve your homemade vanilla ice cream with fresh fruit, fruit coulis, chocolate chips, or even a warm brownie for the perfect dessert. Enjoy!
