Homemade Vanilla Creams
Discover an easy and delicious recipe for homemade vanilla creams, made with our Madagascar Bourbon vanilla caviar . This creamy dessert showcases the subtle and powerful aroma of Madagascar vanilla.
Ingredients for 5 to 6 creams:

500 ml of milk

200 g of whole liquid cream

25 g of cornstarch

80 g of sugar

1 vanilla pod or 1 teaspoon of vanilla caviar

2 egg yolks
Preparation steps:

Prepare the base mix
In a bowl, combine the cream, sugar, and egg yolks. Whisk gently to avoid incorporating too much air. Set aside.

Dilute the cornstarch
Pour about 50 ml of cold milk into a small bowl and add the cornstarch. Mix well until the cornstarch is completely dissolved. Set aside.

Infuse the vanilla
In a saucepan, pour the remaining milk and add the split and scraped vanilla pod (or caviar). Gently bring to a boil over medium heat, stirring occasionally.

Combine and thicken
Remove the vanilla pod (if using). Pour the milk and cornstarch mixture into the saucepan, followed by the cream, egg yolk, and sugar mixture. Stir continuously over medium heat until thickened.

Pour and let cool
Once thickened, immediately remove the cream from the heat. Quickly pour it into small jars or ramekins. Let cool to room temperature before placing them in the refrigerator for at least 2 hours.
Tips for successful creams:
- Infuse the vanilla longer in the milk (10 to 15 minutes) for an even more intense flavor.
- Use a heavy-bottomed saucepan to prevent the cream from sticking during cooking.
